“Impossible!” is what you will hear your dinner guests exclaim! Yet, you can! With a little imagination, it is easy to replicate the appearance of the salmon slice and amaze everyone. Few ingredients for a delicate and delicious taste. These slices will make you look really great!

- Extract the beet juice by centrifuge and decant it inside a large container that can accommodate the two slices.
- Cut the tofu in two halves from the long side and with the knife carve the two rectangles to give the shape of two salmon slices.
- Using the tip of a knife, carve the surface of the slices to create grooves that replicate the veins of the salmon.
- Move the two salmon slices into the container with the beet juice, which should completely cover them (add water if needed to stretch the juice).
- Place in the refrigerator for 2 to 3 hours so the tofu will turn pink.
- After the necessary time has elapsed, move the tofu to a cutting board (do not throw away the juice-it can be drunk or used in another recipe) and cut two strips of nori seaweed the thickness of the slices (about 1.5 cm).
- Stick the strip of nori seaweed on the outline of each slice, so as to recreate the skin of the salmon.
- In a nonstick pan, pour extra virgin olive oil and, when hot, add the two slices.
- Add salt, lemon juice, and ground pepper. Cook each side for 2-3 minutes over high heat. Extinguish the flame.
- Serve the slices by embellishing them with fresh chopped parsley
